To get an insight on Mallorcan cuisine and food, our guide today is Chef Jorge Mariblanca Marquez. Member of the European Culinary Society and Best of Gastronomie, Chef Marquez is a globe trotter with 2 trips around the world, including an extended stay in Namibia. He has been named one of the Top Chefs by the Gastronomic Magazine Conquistando Sabores.
Mallorca is the largest of the Balearic Islands, hosting its capital city, Palma de Mallorca. Located close to the eastern coast of Spain, the islands have been fought over by many powers. Phoenician, Roman, Italians, different Islamic caliphates, Aragonese, they all ruled or heavily influenced the islands. Several centuries of fighting have finally ended in the Islands being part of Spain.
The influence of Catalonia is being strongly felt in the culture and cuisine. Catalan is one of the 2 official languages along Spanish. And Mallorcan cuisine is seen as an extension of Catalan cuisine sharing dishes and produces with Catalonia and the Valencian Community. The main staples are vegetables, cereals and legumes, meat and, of course, produces from the sea.
Being a touristic hot spot, the culinary culture of the visitors has also influenced to a certain degree the local cuisine.
